VEGAN TOFFEE APPLE COOKIES


My mum bought some toffee apple cookies from Tesco and they smelt delicious but they weren't vegan of course so I thought that I would make some of my own that were. These are so easy to make, taste amazing and are really festive!
Ingredients
270 flour
170g vegan butter
150g caster sugar
The equivalent of 2 eggs of egg replacer - I use Orgran No Egg
1tsp vanilla extract
1tsp baking powder
2tbsp non dairy milk
1 cup vegan toffee - I used Jeavons dairy free toffee (use more or less as you prefer)
1 cup dried apple (use more or less as you prefer)

Method
Pre heat oven to 180°C and line a large baking tray with grease proof paper. Cut up toffee and dried apple into little pieces. Mix all of the butter and caster sugar in a bowl. Add in to the butter and sugar all of the vanilla extract and non dairy milk and mix well. Then add in the egg replacer, baking powder, toffee, dried apple and gradually add the flour, mix until its combined. Add more or less flour or milk than measured until the consistency is correct. It should be slightly sticky and hold its shape well, if its too soft place it in the fridge for half an hour for it to harden a bit. Separate the dough into 8 pieces and place on a baking tray leaving enough space for them to spread. Bake for 12-14 minutes. Once the cookies are cooked and out of the oven sprinkle a little bit of caster sugar over the top while they're still warm.
