Ever since Sainsbury’s released their vegan cream cheese I have wanted to try and make cheese cakes with it and today I finally have! I made oreo flavoured ones as there also vegan and just taste so blooming delish! I have made mini ones as they’re quite sickly so it would be easy to overindulge on these if they were a normal sized cheese cake, these mini ones are just the perfect treat size. I love making vegan versions of ‘normal’ food to prove that you can still have all of your favourite foods when you’re vegan and they’re just as delicious!

Ingredients for 6 mini cheese cakes
1 tub of Sainsbury’s deliciously free from plain cream cheese (170g)
400g icing sugar
2tsp vanilla extract
2 packs of normal sized double stuffed Oreos
1 pack of mini Oreos
Food colouring (optional)

Take 10 oreos and separate the cream from the biscuit. Put the biscuits in a sandwich bag or food processor and crush until fine. Add the cream into the crushed biscuits and mix until combined. Press an equal amount of the mixture into the bottom of a greased muffin tin or loose bottom mini sandwich tin. Put in the fridge to harden. Use the whole tub of cream cheese (170g) and put into a mixer or mixing bowl and gradually add all of the 400g of icing sugar in and the 2tsp of vanilla extract. Mix on a low speed until well combined. Separate the cream from 10 more oreos, place the biscuits in a sandwich bag or food processor and crush until fine. Add the crushed biscuits into the cream cheese mixture and mix until well combined. Spoon the cream cheese mixture into the tin on top of the oreo biscuit base and put in the fridge to set for at least 1 hour.

Method for decoration

Take the cream from the last 10 oreo biscuits and mix with a spoon to soften the consistency. Warm on a low heat in the microwave if needed to make sure it is a pipeable consistency. Add food colouring to the cream or leave it as it is, you can also use the cream from the middle of different flavoured oreos to decorate as well. Pipe the cream onto the top of each cheese cake and finish off with a mini oreo.
