VEGAN YULE CUPCAKES

Yule log is one of my favourite festive treats, I don’t think theres a Christmas goes by without me having a piece of yule log. Since I’m vegan I can’t have ‘normal’ yule log that you buy from the supermarket so I had to make my own. I tried to make a vegan yule log and I had a right nightmare with the sponge and rolling it so I decided to make life easier for myself and make a cupcake version. You might notice in the photos that some of the cupcakes have vanilla sponge rather than chocolate, this is…

VEGAN CANDY CANE PEPPERMINT CUPCAKES

Peppermint is one of the most classic festive wintery flavours in my opinion so I decided to get in the festive spirit and make some peppermint flavoured cupcakes. I have been dying to use my edible glitter that I bought a while ago so I went all out with these cupcakes and sprayed it everywhere. I’m not usually a fan of silver glitter but I think it compliments the cool colours of these cakes really nicely and looks beautiful in real life. Peppermint can be quite an overwhelming taste so if you’re not too keen on it you can mix…

VEGAN HOT CHOCOLATE CUPCAKES

I’m always trying to come up with different flavours for cupcakes unlike the usual vanilla or chocolate. Hot chocolate is my favourite drink for this time of year, so I decided to create some hot chocolate flavoured cupcakes. I used Cadburys hot chocolate powder instead of cocoa powder which gives the cake a much softer flavour and literally tastes exactly like hot chocolate. I used butter icing on the top to look like whipped cream, vegan marshmallows, chocolate sauce and hot chocolate powder sprinkled on top to make it look as authentic as possible. Ingredients for cupcakes 180g self-raising flour…

VEGAN PUMPKIN COOKIE DOUGH BITES

Last year I made some pumpkin patch cupcakes and created little fondant pumpkins to decorate them with (blog post here). I have been dying to make fondant pumpkins again ever since. I was making cookie dough bites and I thought that they’d be the prefect size and shape for creating pumpkins! I found a cookie dough recipe online and adapted it so that it was vegan and also to my taste preferences. I made plain chocolate chip cookie dough but you could add spices like cinnamon, nutmeg or if you can get your hands on pumpkin spice add that to…

MINI VEGAN OREO CHEESE CAKES

Ever since Sainsbury’s released their vegan cream cheese I have wanted to try and make cheese cakes with it and today I finally have! I made oreo flavoured ones as there also vegan and just taste so blooming delish! I have made mini ones as they’re quite sickly so it would be easy to overindulge on these if they were a normal sized cheese cake, these mini ones are just the perfect treat size. I love making vegan versions of ‘normal’ food to prove that you can still have all of your favourite foods when you’re vegan and they’re just…

VEGAN RAINBOW CUPCAKES

While scrolling through Pinterest for hours on end like I often do, I came across something called ‘unicorn bark’ and it just looked so pretty I had to try and make it myself. Of course it wasn’t vegan so I ‘veganised’ it and incorporated it into these rainbow cupcakes I’ve made. The actual cake itself is just vanilla with rainbow hundreds and thousands throughout, with rainbow icing and real fresh edible flowers from Sainsbury’s. Ingredients for 6 cupcakes 140g self rising flour 100g caster sugar 1 tsp baking powder 1 cup of rainbow sprinkles 1 tsp vanilla extract 50ml vegetable…

Ingredients for 6 cupcakes 140g coconut flour 100g caster sugar 1/2 tsp baking powder 1 tsp vanilla extract 50ml melted coconut oil 85ml sparkling water Ingredients for decorations Pineapple jam Sugar and Crumbs pina colada icing…
