Peppermint is one of the most classic festive wintery flavours in my opinion so I decided to get in the festive spirit and make some peppermint flavoured cupcakes. I have been dying to use my edible glitter that I bought a while ago so I went all out with these cupcakes and sprayed it everywhere. I’m not usually a fan of silver glitter but I think it compliments the cool colours of these cakes really nicely and looks beautiful in real life. Peppermint can be quite an overwhelming taste so if you’re not too keen on it you can mix it with vanilla flavouring to soften it up a bit and make it taste a bit sweeter. You can adapt this recipe to your own taste and not add in any peppermint at all or just at it to either the cakes or icing, but if you’re a fan of peppermint like myself you can add it to both. Keep reading to find out how to make these delicious cupcakes.

Ingredients for cupcakes
140g self-raising flour
100g caster sugar
50ml vegetable oil
85ml sparkling water
1 tsp baking powder

1 tsp vanilla extract

1 tsp peppermint flavouring

Ingredients for decorations
Dairy free butter
Icing sugar
Peppermint flavouring
White fondant icing
Blue food coloring
Candy canes

Mini snowflake shaped cookie cutters
Edible glitter

Preheat your oven to 180°C and line a baking tray with cupcake cases. Mix all of the dry ingredients together, then add the wet ingredients and mix thoroughly. Fill the cupcake cases with the mixture and bake for 20 minutes until cooked throughly through the middle. Take out of the oven and place on a cooling rack to cool fully before decorating.

Method for decoration
To make the butter icing, take a desert spoon full of butter and mix in icing sugar until the consistency of the icing is stiff but pipeable. Add a small amount of blue food colouring, I used the Wilton royal blue colouring as it is suitable for vegans. Depending on your taste preferences you can either add in some peppermint or vanilla flavouring to the butter icing. Put the butter icing into a piping bag and pipe onto the cakes. Next put some candy canes in a bag and crush them with a rolling pin or something hard so they crumble into small pieces. Roll out some white fondant icing and using a small snowflake cookie cutter, cut out pieces of icing. Spray them with edible glitter and place on top of the icing. Sprinkle the crumbled candy canes onto the cupcakes and finish with edible glitter.
